One True Pairing Ship: Zuko/Mai!

Canon Ship: Zuko/Mai is canon, though! Um, Aang/Katara? I don't love them as much anymore, but I still like them.

"If this happens, I'll stab my eyes out with a spork" Ship: I was like this for a long time with Zuko/Katara. Now that the show is over, I don't mind it so much. (I do think it's very predictable as an "opposites attract" ship, though.) The new ship is Katara/Toph. Mostly because Toph nearly sees Katara as the mother she never had, and their fights are extremely immature and ridiculous. And I hate how Katara/Toph fans handle Aang in the same manner they handle him in Zuko/Katara fics.

"I dabble a little" Ship: How about EVERYTHING? Mostly Mai/Ty Lee and Zuko/Sokka!

"It's like a car crash" Ship: I'll copy your answer and put Jet/Azula. :P

"Tickles my fancy but not sold just yet" Ship: Sokka/Ty Lee. I thought they'd make a cute couple. I still need some convincing.

"Everyone else loves it but I just don't feel it" Ship: Sokka/Suki. I don't know if the entire fandom loves or hates it, but it was the only thing I could think of.
